Easy Chimichurri for Steak

Dressing your steak with a fresh chimichurri sauce looks good and tastes delicious, too. Chimichurri is a fresh green sauce or dressing from Argentina. Its bright green color comes from its star ingredient: parsley. Chimichurri adds an acidic and slightly spicy punch to your steak that cuts through the fat and flavors of a good cut of meat.

Speaking of meat, Argentinians are serious about their steak. The quality of meat from Argentina is so good because most of the cows are grass-fed in the fields of Las Pampas, which is a vast area of grasslands. 

This Easy Chimichurri for Steak uses pantry staples like red pepper flakes, oregano, red wine vinegar, and olive oil. All you need to do is pick up fresh parsley and garlic from the grocery store. Then, you’ll have all the ingredients you need to whip it up.

Some Chimichurri recipes call for fresh Fresno chiles for spice, but the red pepper flakes in this recipe do the trick. You also might see recipes for red chimichurri but the traditional way to make it is green with parsley.

Serving Your Chimichurri

Chimichurri is meant to be paired with grilled meat but a well-cooked steak in a cast iron skillet works just as well. It’s also often used as a topping on choripán, a South American hot dog-like sandwich with grilled chorizo. Choripán makes a great appetizer when you’ve already got the grill going.

Whenever you cook steak for a crowd, you’ll want to make this. Cut your steak horizontally against the grain and then dress it generously with chimichurri. I like to leave a bowl of it on the table for people to add more to their own plates.

You may be tempted to double this recipe for a big crowd but one bunch of parsley will make enough for six to ten people. 

Easy Chimichurri

This easy Argentinian chimichurri comes together in a matter of minutes. It's the perfect topping for steak and other grilled meats.

Ingredients

  • 1 bunch parsley chopped (about 1 cup)
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • 4 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp crushed red pepper
  • 1 tsp salt

Instructions

  • Chop 1 bunch parsley leaves (it should yield about 1 cup when chopped) and add to a bowl. You can also add in some chopped parsley stems if you'd like.
  • Mince 4 cloves garlic and add to the same bowl as parsley.
  • Add 1/2 cup olive oil, 2 tbsp red wine vinegar, 1 tsp oregano, 1 tsp crushed red pepper, and 1 tsp salt and mix together.
  • Taste to see if it needs anymore salt.
  • Serve in a bowl with a spoon for serving or top grilled meats like steak with it.
