Chop 1 bunch parsley leaves (it should yield about 1 cup when chopped) and add to a bowl. You can also add in some chopped parsley stems if you'd like.
Mince 4 cloves garlic and add to the same bowl as parsley.
Add 1/2 cup olive oil, 2 tbsp red wine vinegar, 1 tsp oregano, 1 tsp crushed red pepper, and 1 tsp salt and mix together.
Taste to see if it needs anymore salt.
Serve in a bowl with a spoon for serving or top grilled meats like steak with it.
