Arugula Fig Salad
- 15-20 figs halved
- 6 cups arugula
- 1/4 cup parmesan
- 1/2 lemon
- pinch of salt
Balsamic Tahini Dressing
- 6 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tsp tahini
- pinch of salt
Fig Arugula Salad
Half 15-20 figs
Toss 6 cups arugula with 1/4 cup parmesan, the juice of 1/2 lemon, and a pinch of salt in a large bowl with about 10 halved figs.
Serve salad and top with remaining figs and drizzle Balsamic Tahini Dressing on top.
