Fig Arugula Salad With Balsamic Tahini Dressing

Bright yet decadent side salad with figs, arugula, lemon, parmesan, and a creamy balsamic tahini dressing.

Ingredients

Arugula Fig Salad

  • 15-20 figs halved
  • 6 cups arugula
  • 1/4 cup parmesan
  • 1/2 lemon
  • pinch of salt

Balsamic Tahini Dressing

  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp tahini
  • pinch of salt

Instructions

Fig Arugula Salad

  • Half 15-20 figs
  • Toss 6 cups arugula with 1/4 cup parmesan, the juice of 1/2 lemon, and a pinch of salt in a large bowl with about 10 halved figs.
  • Serve salad and top with remaining figs and drizzle Balsamic Tahini Dressing on top.

Balsamic Tahini Dressing

  • Add 2 tbsp balsamic vinegar into a medium bowl and slowly whisk in 6 tbsp olive oil until combined.
  • Add 2 tsp tahini and a pinch of salt and mix to combine.
