Steamed Mussels in Garlic and White Wine

French-style steamed mussels in a garlic white wine sauce.

Ingredients

  • 4 lbs mussels
  • 2 tbsp olive oil
  • 2 shallots diced
  • 8 garlic cloves minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup white wine
  • 2 lemons
  • 1/4 cup parsley chopped

Instructions

  • Clean 4 lbs mussels in cold water, discarding any broken or open shells.
  • Dice 2 shallots mince 8 garlic cloves, and chop 1/4 cup parsley
  • Add 2 tbsp olive oil to a pot over medium-high heat.
  • Add diced shallots and cook until softened (about 5 minutes).
  • Add garlic and 1/4 tsp red pepper flakes.
  • Add in 4 lbs of cleaned mussels and 1/2 cup white wine. Cover and cook for 8 to 10 minutes until all the mussels have opened.
  • Uncover and squeeze in the juice of 2 lemons and sprinkle in 1/4 cup parsley.
  • Stir everything together and serve with a toasted baguette or French fries.
