Steamed Mussels in Garlic and White Wine
French-style steamed mussels in a garlic white wine sauce.

- 4 lbs mussels
- 2 tbsp olive oil
- 2 shallots diced
- 8 garlic cloves minced
- 1/4 tsp red pepper flakes
- 1/2 cup white wine
- 2 lemons
- 1/4 cup parsley chopped
Clean 4 lbs mussels in cold water, discarding any broken or open shells.
Dice 2 shallots mince 8 garlic cloves, and chop 1/4 cup parsley
Add 2 tbsp olive oil to a pot over medium-high heat.
Add diced shallots and cook until softened (about 5 minutes).
Add garlic and 1/4 tsp red pepper flakes.
Add in 4 lbs of cleaned mussels and 1/2 cup white wine. Cover and cook for 8 to 10 minutes until all the mussels have opened.
Uncover and squeeze in the juice of 2 lemons and sprinkle in 1/4 cup parsley.
Stir everything together and serve with a toasted baguette or French fries.
